Poor food safety practices include absence of handwashing, food not cooked to the correct temperature, food not held to the proper temperature (cold foods at 41°F or below, hot foods at 135°F or above), evidence of pest infestation, foreign objects found in food, no hot water, sewage back-up, etc.
